The use of diammonium phosphate as a yeast food in distilling material, in amounts not in excess of ten pounds per 1,000 gallons of the distilling material, is considered as being consistent with good commercial practice within the limitations of section 240.524 of the Wine Regulations. Winemarkers desiring to use diammonium phosphate within the amount set forth above, as a yeast food in distilling material may receive the approval of the Assistant Regional Commissioner, Alcohol and Tobacco Tax, by the filing of appropriate notice pursuant to section 240.1052 of the regulations.
